Victorian Cake

Ingredients:

All purpose flour : 2table spoons less than 2 cups
Brown sugar: 1 1/2 cups
Fresh cream: 1 cup
Milk: 3/4 to 1 cup - as required to mix.
Soda: 1tea spoon
Baking powder: 1/2 tea spoon
Vanilla Essence: 1 tea spoon
Oil/ Melted butter: for greasing the baking dish
Dryfruit mixture (almonds, cashew, pista, raisins & walnut): Optional

Method:

1. Sieve flour, baking powder & soda together. Keep aside for later use.
2. Mix brown sugar & fresh cream in a bowl, stir them for 5-7min. Mix well till sugar is dissolved. Do not over beat at this stage.
3. Now add the cream and brown sugar mixture to the flour mixture(from step one), add vanilla essence. Use a fork to beat the mixture. Mix it on low speed.
4. Add enough milk as needed to obtain dropping consistency, beat well.
5. Now take a baking tin in which cake can be baked. Grease whole tin with oil from inside. Add little flour and tap it all the sides so that a this coating of flour is formed all around the baking dish.
6. Pour the prepared mixture in this tin rotating along the corners. Note that if you pour the mixture straightaway in the middle of tin, the cake may not bake well.
7. To add more fun, you can add various dry fruits. Sprinkle the some almonds, pista, cashew, raisins & walnuts with the cake mixture before pouring into baking dish.
8. Preheated oven at 210 C. Bake at 180 C for 20-25min.
9. After removing from oven let it cool in tin for 10min & then take out the cake from tin.
10. Your cake is ready. Now you can decorate your cake with icing or you can have it without any decoration.
